Finding Joy In These Trying Times

It all started with an idea on how to bring joy to our neighborhood to help everyone get through the isolation of the COVID-19 pandemic.

My husband Doug owns Sound Video Solutions, an audio-visual company and I am the CEO of Holista Foods which provides healthy low glycemic pasta to grocery stores and online. In March our lives and daily routines changed dramatically throughout the world.

​

All special events and group meetings were cancelled. My husband’s AV rental bookings were cancelled, and he was forced to lay off all his employees. As he walked around his deserted business and empty offices, he wondered how he could put his audio-visual equipment to good use. He had huge speakers sitting idle that were used for large events. He decided to bring them home, place them on our front porch and play a few songs every day for the neighbors who were sequestered in their homes.

Summer is coming to an end, so take full advantage of the delicious bounty of fresh local produce still available to pair with your dinner. Tomatoes are thriving right now in Western New York, and basil is doing wonderful as well. This brings me to the perfect summer side made with basil, tomato and low glycemic index (GI) spaghetti. Holista Low GI spaghetti has a certified glycemic index of 38, which is low and therefore means it does not cause a rapid rise in blood glucose. Yay! You can think of the spaghetti as a “slow carb” meaning the carbohydrates are digested slower, therefore resulting a slower and lower rise in blood glucose. Holista Foods | Low GI Recipe | Coconut Herb Chutney and Pasta

Spices glorious spices and delicious chutneys!  We love them and if you take a peek Huma Naz’s fridge, you’ll find a good variety of chutneys.  From sweet to savory and even spicy, she uses them in so many of my dishes!   Huma kindly shared her Homemade Coconut and Herb Chutneys, like this one, which provides both flavor and nutrition to a healthy meal without excess added sugars or sodium.  This recipe also provides a nice dose of fiber, vitamin C , vitamin A, and immune boosting antioxidants.

This chutney will become a staple in our fridge and blended so nicely with Holista Lingune.  

​

Ingredients ​

  • 1 bunch of cilantro, stems and leaves chopped

  • 2 Tbsp. unsweetened coconut flakes

  • 1 small green serrano or jalapeño pepper, chopped

  • 2 Tbsp. freshly squeezed lemon juice

  • 1 – inch piece ginger

  • 1 tsp. cumin seeds

  • ½ tsp. chili powder

  • tiny pinch salt

  • 1 tsp. honey

  • 2 cups mixed greens

  • 1/3 package Holista Linguini.

Directions 

  1. Toss the first 9 ingredients in a food processor and blend until smooth.  You can add in a little water while blending to smoothen.  Set aside.

  2. In a medium pot, add linguini to boiling  water. Return to rapid boil and cook linguini for 3 minutes ala dente.

  3. Drain and rinse until cool.
  4. Prepare 2 plates with mixed greens.

  5. Toss linguine with the chutney and place on the bed of greens.

  6. Sprinkle with more coconut for decoration and enjoy!

Holista Healthy Pasta Recipes

Breaded Portobello Mushroom Cutlets with Holista Pasta

Nadja shares a hearty vegetarian pasta recipe that is both decadent and healthy.  Learn step by step, how to make breaded portobello mushroom cutlets served over Holista Spaghetti. 

Ingredients 

  • ½ package (8 ounces) Holista Pasta – Spaghetti or Linguini

  • 4 Portobello mushrooms (one person)

  • ½ cups all-purpose flour

  • 2 tsp. garlic powder

  • 2 Tbsp. dried oregano

  • ¼ tsp pepper

  • 1 tsp. salt

  • 2 eggs

  • 1 Tbsp. water

  • 1 ½ cups panko breadcrumbs

  • ½ cup vegetable oil & ¼  cup olibe oil combined (more might be needed depending on the size of your pan)

  • 24 oz tomato sauce

  • Fresh Basil leaved (optional)

Directions 

  1. Mix together flour, garlic powder, oregano, salt, and pepper in a bowl and place in a shallow plate.

  2. Whisk eggs and water together in a wide bowl

  3. Place breadcrumbs in a large shallow plate or bowl.

  4. Using a spoon, scrape the dark gills from each mushroom bottom. Rinse well and pat dry on a paper towel.

  5. Cut each mushroom in half and cut down the center stem.

  6. One at a time, dip each mushroom piece into the flour and lightly cover each side with flour.

  7. Then dip the mushroom into the egg mixture, allowing the excess egg to drip off.

  8. Then dredge into the breadcrumb mixture to coat.

  9. Place breaded cutlets on a baking sheet to wait while oil is heating

  10. Heat oil (vegetable & olive oil)  in a large heavy skillet or electric pan. There should be enough oil in the pan for the cutlets to “swim”.

  11. When the oil is hot, place one or two cutlets in the skillet at a time, being careful not to crowd the cutlets.

  12. Fry first side until golden brown, about 2-3 minutes.

  13. Turn cutlets over with a spatula, being careful not to splatter hot oil.

  14. Fry on the second side until golden brown.

  15. Drain on paper towels.

  16. If you have more cutlets to fry, then place finished cutlets in a piece of foil and keep warm in the oven at 250°F while you continue to fry up the rest of the cutlets.

  17. Warm tomato sauce

  18. In a medium or large pot, add Spaghetti to boiling water. Return to a rapid boil and cook spaghetti for 3 minutes (ala dente). Drain.

  19. Divide spaghetti evenly between 4 plates. Top with warm tomato sauce.

  20.  Place 2 mushroom cutlet halves on top of each plate.

  21. Decorate with fresh basil.

  22. Serve and Enjoy!

All special events and group meetings were cancelled. My husband’s AV rental bookings were cancelled, and he was forced to lay off all his employees. As he walked around his deserted business and empty offices, he wondered how he could put his audio-visual equipment to good use. He had huge speakers sitting idle that were used for large events. He decided to bring them home, place them on our front porch and play a few songs every day for the neighbors who were sequestered in their homes. It would give everyone in the neighborhood a chance to check in on one another by coming out to wave and dance to a few songs from a safe distance. It started with one song “Bohemian Rhapsody” by Queen. The music seemed to bring real joy to folks, many who were alone.

​

To our amazement the event went viral.

​

ABC World News, Good Morning America, The Today Show, United Kingdom’s Daily Mail and numerous print, radio and TV media featured it as a way to lift spirits while social distancing.

​

The Daily Show’s Trevor Noah talked about it and found joy in seeing people dance out of beat.

​

From walks in the park, to neighbors offering to buy your groceries, to spontaneous music performances, we are seeing the world through a different lens and we are changing our view of what’s truly important.

During the COVID-19 pandemic, staying healthy has never been more important. More people are now cooking at home and have discovered the joy of cooking. As well as building family bonds, the focus on cooking helps to relieve stress. My favorite saying is “You can’t cook and worry at the same time”.  Food is the biggest medicine you will ever take. Choosing the best recipes and ingredients will help your immunity, your energy levels and frame of mind.

Holista Healthy Pasta Recipes

Once a week my husband and I get dressed up and have date night in our kitchen.

This is one of our favorite meals. It pairs beautifully with any dry white wine.

This is an elegant yet simple meal made with healthy pasta that makes “dining in” special.

Serves 2

Ingredients ​

  • 3 slices Bacon

  • 2 Tbsp. Olive oil

  • 4 chicken thighs

  • 1 medium onion thinly sliced

  • 2 cloves garlic smashed

  • 1 LB mushrooms cleaned and sliced

  • 1 cup dry white wine

  • 2 cups chicken stock

  • 2 tsp dried thyme or bundle fresh thyme

  • ½ tsp salt

  • 1/8 tsp red pepper flakes

  • 1/3 package Holista Linguini.

Directions 

  1. Chop bacon into small ½ inch pieces. Fry in skillet until crisp. Set bacon aside.

  2. Drain fat from skillet. Add olive oil to skillet and brown chicken thighs, on both sides.

  3. over medium heat. Remove chicken from skillet and set aside.

  4. Add mushrooms and onions to skillet and sauté for 3-4 minutes over medium heat until mushrooms lose most of their liquid. Add garlic during last minute.

  5. Add wine, thyme, salt and pepper flakes and cook, stirring often, until liquid is reduced by half.

  6. Return chicken to the pan. Add chicken stock to almost cover chicken. Bring to a boil. Reduce to simmer for 30 minutes.

  7. Remove chicken from skillet and set aside.

  8. Cook sauce over medium heat to thicken it, stirring occasionally.

  9. Return chicken and bacon bits to sauce.

  10. In a medium pot, add linguini to boiling  water. Return to rapid boil and cook linguini for 3 minutes ala dente Or 4 minutes more tender.

  11. Drain.

  12. Divide linguini evenly between 2 plates. Top with chicken & mushroom sauce. Enjoy!
