Ingredients

1 package (14 oz) Holista Low GI Spaghetti

1 ½ Pounds 90% lean ground beef (or turkey)

½ cup breadcrumbs
-
2 large eggs, slightly beaten

¼ cup parmesan or romano cheese
-
2 cloves garlic, finely chopped
-
2 Tbsp fresh parsley, finely chopped
-
salt and pepper to taste
-
3 Tbsp olive oil
-
1 small onion, finely chopped
-
4 cloves of garlic, finely chopped
-
2 – 28 oz cans of low-sodium crushed tomatoes
-
½ cup red wine
-
¼ cup fresh basil, roughly chopped

Salt and Pepper to taste
Directions:

Fill a large pot ¾ full with water, bring to a boil.

For Meatballs: Combine ground beef, breadcrumbs, egg, cheese, garlic, parsley and seasonings in a large bowl, mix until all ingredients are combined. Make into 18 meatballs.

In a separate large skillet or pot, add olive oil, heat until hot. Add meatballs in separate batches, browning on all sides (approximately 2 minutes per side). Remove meatballs and set aside.

For Sauce: In same skillet or pot, remove grease from frying. Add new oil, get hot, add onions and garlic, heat until browned.

Add red Wine, stirring to get all browned bits from bottom of pan.

Add crushed tomatoes, heat until boiling, reduce heat to simmer.

Add meatballs, chopped basil, cook for approximately 10 minutes. Salt & pepper to taste.

When pasta water is boiling, add Holista Low GI spaghetti to water.

Bring back to boil, boil 3 minutes stirring occasionally. Drain water.

Add 1 cup of tomato Sauce to pasta, mix until combined. Portion onto plates or bowl.

Add meatballs and additional sauce. Enjoy!
